We cook a lot and wanted to share some of our go to recipes with you guys. We have got a full day’s worth of recipes for you to try. Please feel free to send us any of your favourites over!

Breakfast

Pancakes!!!

100g rolled oats
1 tsp baking powder
2 bananas, mashed
1 tbsp cinnamon (optional)
2 eggs
150 ml any milk of your choice
250g frozen berries
A little coconut oil or butter

Mix together the bananas, eggs, berries and milk. Add in the oats, baking powder and cinnamon if you are using it.

Heat a non stick pan on a medium heat, add a little coconut oil or butter. Drop large spoonful’s of the batter into the pan. Cook until the edges are cooked, flip and cook for another couple of minutes on the other side.

Serve the pancakes with chopped bananas, extra berries and crushed pecan nuts, drizzle with a little maple syrup or honey.

Lunch

Sweet Potato Frittata

This has to be one of our all-time favourites. It’s super simple, can easily be used for meal prep and even works well for picnics. This recipe can easily be adapted, and you can add whatever fillings you like. We tend to chuck in any left-over veggies, or even quinoa.

8 eggs
1 large sweet potato
200g Feta
Sundried Tomatoes
1 head of broccoli

Cube the sweet potato, drizzle some olive oil, cayenne pepper and oregano and roast at 220˚C for 25 minutes.

Break up the broccoli into florets, drizzle with olive oil, a little garlic and salt, and roast this in the oven with the sweet potatoes for 20 minutes.

Whisk together the 8 eggs, chop up the sundried tomatoes and feta.

Place all ingredients into an oven proof dish, lined with baking paper and roast at 180˚C for 45-55 minutes or until it is firm all the way through.

This is delicious served with a simple green salad.

Afternoon Snack

These are extremely easy to make and delicious. Having been a little apprehensive about blitzing nuts in my little blender for months I finally bit the bullet and did it, and it was a great success. They are relatively similar in consistency to a Lara Bar. I found that I had to keep them in the fridge for best taste. The hemp protein powder also has a great taste and is very easy to digest.

Dinner

Summer Trout Salad

I am a huge fan of smoked trout. If you prefer you can also make this salad with hot smoked salmon.

1kg baby potatoes, boiled and halved
2 bunches of asparagus, blanched
600g hot smoked trout, flaked
1 cup fresh broad beans or peas, blanched
1 lemon with rind finely grated and juiced
½ cup wholegrain mustard and honey dressing (see ingredients below)
1 handful of fresh dill, roughly chopped
salt and pepper, and a little chilli

Dressing:

1 Tbsp wholegrain mustard
1 Tbsp Dijon mustard
1 clove garlic, crushed
1 Tbsp honey
1 Tbsp white wine vinegar
100 ml extra virgin olive oil
2 Tbsp lemon juice and zest

Dessert

Once I discovered that my little blender could take nuts I decided to experiment more with this and I found this amazing no bake Greek yoghurt tart recipe.  It is incredibly easy to make.

I tried it with Greek yoghurt filling and coconut yoghurt, both were delicious!
